In order to stick to Pillars of Health's ideologies be nice to the planet, to our bodies and to our tastebuds I've teamed up with AMAZING chef Simon Vine and nutritionist Kristina Kozicynaite to create some tantalizing taste sensations that are easy to make, eco-friendly, nutritionally superior and easy to make!
Yesterday's creation was an Ocean-wise sable-fish encrusted with Walnuts (BC-grown) topped with basil, a parsnip mash and a carrot, apple and red & orange beet slaw. After being miso-coated it is covered in crushed walnuts, then the fish was braised slightly with a miso and organic maple syrup glaze (YUMMY!) and then baked for about 10-12 minutes in the oven on high temperature to keep the fish juicy. The parsnips were boiled and mashed (and the juices kept for soup stock for a later date) and lightly sprinkled with Sea Salt. The carrot, beets and apple were grated raw and made for a beautiful color feature when we plated this delicacy!
The food was picked because of it's seasonal nature. Therefore it did not travel a large distance from production to plate reducing emissions, pollutants, packaging and the need for preservatives. The time from earth to plate increases the nutritional value of food traditionally lost through oxidative processes. It also supports our local economy and our immune system. Foods are subject to the same environmental stressors we are and therefore derive their defense systems to combat these, by eating them we strengthen ourselves against the bugs from our own backyards.
We chased the food with a beautiful Mission Hill white wine grown in the Okanagan Valley, BC and with spring water collected in glass (NOT plastic) from our own local mountains here in Vancouver near Lynn Valley.
